this is quite the embarrassing post. but honesty is what keeps people coming back. i had some watermelon and it was getting a little soft so i googled watermelon recipes and got the below recipe. read it then go to the bottom for the embarrassing part.
Watermelon Chiffon Pie Recipe
Ingredients -2 cups pureed watermelon 1/2 cup powdered sugar, 2 Tbsp unflavored gelatin, 1/4 cup cold water, 1/2 cup boiling water, 1 Tbsp lemon juice , 2 egg whites, stiffly-beaten1 cup whipping cream, whipped 1 Graham Cracker Crust (see recipe below)Whipped cream to garnish Graham Cracker Crust 24 graham cracker squares 1/4 pound butter or margarine 1/4 cup sugar 1/4 tsp cinnamon
Instructions Thoroughly mix crust ingredients and pack into a 10-inch pie pan. Hint: try to get the crust thickness very even and not too thick.
Puree watermelon to measure 2 cups. Add powdered sugar. Set aside.
Soften unflavored gelatin in cold water. Add boiling water; stir to dissolve. Add lemon juice and pureed watermelon. Refrigerate until mixture begins to thicken. Fold in egg whites and whipped topping. Pour into pie shell and refrigerate until firm. Garnish with whipped topping. Makes one 10-inch or two 8-inch pies.
Yield: 10 servings
it is delicious.
so delicious i fact that i ate the whole thing in one day(all by myself-1/4 pd of butter-a whole cup of whiping cream- the real kind, a bunch of sugar).
i'm not even that mad at myself b/c i just read in the oprah magazine that if you think your fat...it causes you undo stress and encourages your body to hold on that fat- hormones or something like that.
i had a friend and we'd pretend we were anorexic(we weren't really, i could never make it more than 4 hours w/o food)
well we had heard that when anorexic people looked in the mirror they saw fat people.
even though they were really skinny.
so when we looked in the mirror we just said- hey, we are much skinnier than we look. its just our mind messing with us.
(i know.. thats probably going to offend someone-lots of my friends are just a little too skinny)
anyways the pie...its not that easy to make but if you've got a watermelon you should really try it. its a little runny though so it would probably be better to just serve it like a pudding w/ gram crackers and whipped cream on top. try to share with other also.
i bake. i love sweets. its a weakness.
i have issues with cooking other things. people don't like the other things i cook. it hurts my feelings. so its not worth the mess.
thats why fresh and easy is THE BEST store ever, i buy everything almost all ready to cook.(tonight- mashed spuds, sirloin teriyaki ribs, corn on the cob-ready in 10 min. ($5.50 all on 50% off clearance)
i'm writing them a letter about how much i love them. i'll post it.
gonna go run now. its gotta be a unbelievable amount of calories in a whole pie.

So what was the embarassing part? The fact that if you had a soggy watermelon you wouldn't just throw it away? Heck no! Instead, make a complicated runny watermelon puree! :) Totally kidding.

i am glad i don't have to be offended by the "too skinny" friend comment. i definitely have to eat every 4 hrs.

i didn't think that many people ate a whole pie in one day? i'm sure they do- they probably just don't admit it. so thats why i thought it was a little embarrassing- that i was admitting it and all.
maybe if i didn't eat anything else it would be ok...but of course i did...like every other meal!

I would never have though watermelon pie even existed! I'm turning into a F&E junkie too, it's literally just down the street from me (within walking distance).

lately i've been embarassing myself over and over by doing that with everything... cake, cookies, and pretty much every baked good. since i've had emaline i've had such a sweet tooth. i'm going to triple in size if i don't stop!

I love sweets too Sarah. And I couldn't agree more about the fresh n' easy store. Its awesome. I also would have never thought a watermelon pie existed either. It looks yummy.

I guess since you look amazing and are in the best shape ever, I can't really feel bad for you that you ate an entire pie - go ahead..eat another one...I dare you!
btw - kels won't be swimming tomorrow - I have a YW thing and I won't make my babysitter take all 3 of them to swim. See you next week!
