I wanted to post this muffin recipe- i make it all the time and everyone loves it- SUPER easy.

i put what i do in red
Banana Muffins (makes 12 muffins)
3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4, me too)
1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)(i use honey or agave)
1 slightly beaten egg
1/3 cup melted margarine or butter( i sometimes just skip the butter and it comes out ok. today i used just a tbs of coconut oil)
1 teaspoon baking soda1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour (i do 1/2 ww and 1/2 white - so the kids will eat it)
Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir!
Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes.
Enjoy!
*These are much more flavourful the next day, and they freeze very nicely too!
*Also, if you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding dark chocolate chips and raisins, or better yet, BOTH! Yum
UPDATE: If you like these banana muffins, try my Carrot Cake Recipe (they can also be made into muffins!)
Delish!YET ANOTHER *UPDATE*: I just tried substituting 1 - 28 ounce can of mashed pumpkin in place of the bananas, doubled the recipe, increased the sugar slightly, added a tsp. of cinnamon, some allspice, 1 1/2 Cups of raisins and voila, super Pumpkin Muffins- i mix a little in w/ the banana recipe)!!!

my google reader must not be working. i have missed a ton of posts.
i think you are crazy for doing 3 schools. don't you want the kids to see each other/look out for each other? at least two in one.
they would all do great at franklin.
i know you'll do what you want, but i like to give advice. i don't know why.
i need to sign up for swim. i can't believe i missed all these posts.

If you use agave instead of sugar how much do you put in? Sounds like a great recipe! I'm going to try it!

i try to do the least amount of sweetner I can handle. the bananas really sweeten it up. so 1/3 c of agave is usually enough.
