
Crepes- Oh how I love them!
I read this book to the kids a few years ago about how this little girl in France made crepes for all of her friends and family and sold them on the street. So we decided to try making some crepes(I almost always screw up the first one). We brought them to the neighbors filled with strawberries, chocolate and whipped cream. That started our love of crepes. Heres the recipe: 1 of each thing...simple.
1 egg
1 cup of flour(I like whole wheat or unbleached, King Arthur is the best)
1 cup of milk
1 tsp of oil
I usually double this recipe but don't triple it, make another batch.
I use 2 pans at a time, otherwise you'll be cooking forever! Spray the pan well w/ your cooking spray. Then put in some batter, swirl it around in the pan for a thin layer. Use your rubber spatula to lift up the sides as it cooks then FLIP IT!
Now the best part: put whatever you want inside. I use them instead of bread for sandwich fillings. I've used them instead of a tortilla. Peanut butter and chocolate chips is AWESOME.
At the mall there is a Crepe store and its always got a long line. I think its the new trendy thing. Like the soup place on Seinfeld. The stores have this HUGE crepe pan maker thing, the crepes like a foot across and it has its own flipper thing too. I'd love to get one of those babies. Perfect crepes every time.
